Per-guest dinner bands ($95–$400+) include groceries — the chef absorbs the market price inside the quoted band. Multi-day and weekly services bill groceries at cost instead, because a week of a family’s eating is too variable to price blind. Either way, receipts are yours on request.
The Hawaiʻi grocery reality
Island groceries run roughly 31–53% above mainland prices — that is the ocean, not the markup. Your chef shops the morning of service, and the receipt shows you paid the shelf price and nothing more.
