The lines on every quote
Food is priced per guest by band — for signature dinners, grocery procurement and ingredients sit inside that band. Staffing is hourly with a four-hour floor. Travel is a published zone fee where it applies. Then the fee stack: 20% service charge and GET up to 4.7120%, each on its own line. Stay Chef weeks add groceries at cost with receipts. If a quote you are holding does not itemize these, ask why.
What moves the number
Guest count first — per-guest bands reward the full table. Menu band second. Then the Hawaiʻi reality: groceries run roughly 31–53% above mainland prices, and dates around holidays carry premiums that should be published, not discovered.
Worked math
Four guests at the Signature midpoint: roughly $630 for food, groceries inside the band. Add a server for a plated four-course ($55/hr, four-hour floor = $220), then 20% service and GET on their own lines. The written quote shows exactly this arithmetic — your number, not an average.
