The fee stack, itemized

A worked five-day week
Five days at the $850 base: $4,250 for the chef line — breakfast, provisioning, and dinner daily. Groceries for a family of five typically land at $900–$1,400 at cost, receipts attached. Add a server for two dressed-up dinners ($55/hr × 4-hr floor × 2 = $440), then 20% service and GET on their own lines.
What moves the day rate
Guest count, meal count per day, menu band, and travel zone (North Shore and Turtle Bay add from $75 a day). There is no published weekly discount — the written quote is the total.
