The realistic windows
Last-minute requests are always worth sending — the roster is deep enough that a Thursday cancellation becomes your Friday dinner.
- Signature dinners and Date Nights: 1–2 weeks is comfortable; 72 hours is sometimes possible
- Stay Chef weeks: 3–6 weeks, longer for Christmas and New Year
- Wedding weeks: 2–6 months
- December holidays and graduation season (May–June): as early as you can
