A night in the house you actually have: menu design within forty-eight hours of the enquiry, same-day shopping at Honolulu markets, cooking on the cooktop that exists, paced table service, and a kitchen left cleaner than we found it. Groceries sit inside the CORE band on a signature dinner — $195–$290 USD a guest on Oʻahu. Alcohol is BYO or quoted. Rentals, venue fees, and a bartender are add-ons. Nothing named “hospitality” swallows those lines.
You book myCHEF Hawaii. We assign the crew to the size of a Kahala dining room or a Ko Olina villa, not a named-chef profile. A table for six is not a reception for sixty — that staffed room lives on /catering and a weekend stack lives on /weddings. Hour by hour on a Honolulu evening
Three hours before the first plate, the crew is on site — earlier when a Waikīkī freight elevator has a window. Rentals go down if you asked for them. Mise en place happens in the galley you have, not the kitchen we wish you had. Corridor traffic is planned: we do not discover the H-1 at five and call that a surprise. Building COIs and loading docks are arranged before that clock starts.
First course lands when you sit, not when a seatings chart says so. Mains hold the long middle of the night. Dessert, then cleanup, then a quiet exit — typically about three and a half hours of service after the first plate, unless you booked a longer window. Kids’ plates come out with the adults. If the lānai is wet, the written backup is already the indoor table. If a Honolulu squall actually cancels the night, the reschedule note on /legal is the one we already sent you.
A compact Kakaʻako or Waikīkī galley changes the hour, not the standard. Bring-equipment menus, induction if the cooktop is a joke, a shop that fits the fridge. We will not plate an eight-course tasting in a studio that cannot hold the pans. Tell us the property type on /quote. Sibling /bar can open the terrace an hour before dinner if you want a pour without burying a bartender in the food.
Dietary design for Oʻahu tables
Vegan, gluten-free, dairy-free, nut-aware, pescatarian, and kids’ plates are designed into the menu — not swapped at the pass in a Kahala kitchen. Severe allergies are a conversation with the crew before confirmation, never a form field we assume we understood. Honolulu fish-market shopping happens the same day as service. If the catch cannot meet a restriction, we say so in the menu draft, not at the table.
Kids eat with the house. We do not hide a chicken-nugget line unless you ask for it. Mixed tables — half the room gluten-free, half not — get a written plan so the pass does not improvise. The sample estate menu on the island pages is a direction, not a laminated carte. Your written menu is for that list and that cooktop.
We do not print farm names we have not verified. Island produce when it is genuinely better; imports when that is the honest plate. If you want a sushi-forward night, say so — it is a menu direction, not a separate brand. Small kitchens in Waikīkī and Kakaʻako
Most resort condos were not drawn for restaurant service. We plan as if that is true. Bring-equipment menus, a short list of pans that fit a galley, freight-elevator windows booked with the building, certificates of insurance sent before the date. The kitchen size changes the plan. It does not change whether we leave it clean.
A Gold Coast estate can take a fuller brigade. A Waikīkī residence may take two people and a tighter menu. We will tell you which, in writing, before you deposit. If the suite is a hotel room with a coffee maker, we decline. If it is a residence with a cooktop, a fridge, and a table, we design to that. Ko Olina villas are usually the other end of the scale — kitchens built to cook, west-side provisioning that does not bounce to town between nights. Vacation rental realities on Oʻahu
Airbnb, VRBO, resort residence, household you already live in — the test is the kitchen. Cooktop, fridge, table. If those exist, we can work. If they do not, we say no before a deposit. Kailua and Lanikai are a thirty-day estate market; we do not sell a one-night tourist drop-in into a weekend rental the law no longer allows. A celebration dinner during a genuine month-long stay is a different product, and we will quote it that way.
Property managers, building desks, and household staff belong on the first /quote message. Freight, COI, parking, quiet hours — those are Honolulu facts. We arrange them.
