Premium versus Signature
Signature ($125–$190 a guest) is the dinner most tables want: three or four courses, market-driven, groceries inside the band. Premium adds courses, ingredients that cost what they cost, and a second pair of hands in the kitchen.
Service to match
A server at $55/hr keeps the table cleared and the glasses poured; a sous chef at $75/hr keeps the courses landing hot. Both are itemized on the quote, four-hour floor.
